The taste of the sea whose essence is savoured using genuine raw materials, started from the meat of selected, fresh fish caught in the bluest of seas. Where your gaze is lost… the same will happen to your palate.


  • American scallops on a cream of peas flavoured with ginger and balsamic vinegar caviar
  • Bronze-drawn paccheri pasta from Gragnano with sea urchin pulp and slightly spicy salicornia greens
  • Fillet of line-fished Atlantic croaker on smoked provola water, buttered mini-asparagus and cherry tomatoes in confit
  • Bavarian cream with candied Amalfi lemon and vanilla sablé, meringues and white chocolate flakes

  • Tortelloni of duck in confit, Gruyère DOP cream and beetroot powder
  • Welsh rack of lamb PGI with Celtic herbs glazed with acacia honey and a onion and potato tatin
